CHICKEN PILAU

Ingredients:-

▪ 2 cups basmati rice

▪ 1 kg chicken

▪ 4 Tbsp oil

▪ 3 cloves

▪ 5 black peppercorns

▪ 1 cinnamon stick

▪ 1 cups thinly sliced onion

▪ 2 tsp ginger garlic paste

▪ 1 cup chopped tomato

▪ 1/2 tsp coriander powder

▪ 1/2 tsp turmeric powder

▪ ½ tsp red chili powder

▪ 1 tsp garam masala powder

▪ 2 tbsp lemon juice

▪ 4 cups water

▪ Salt to taste

▪ Fresh coriander and fried onions for garnishing

PREPARATIONS AND HOW TO COOK:

1. Wash and soak rice for 15 minutes.

2. Heat oil in a pan.Add cloves, black peppercorns and cinnamon.Fry for 20 seconds.

3. Add onions and fry till slightly browned.Add ginger garlic paste and fry till onions are nicely browned.

4. Add chicken and cook on high heat for 3-4 minutes then add tomatoes and cook for a minute.

5. Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt, cover and cook till chicken is done.

6. Remove the cover and cook on high heat till all the water is absorbed.

7. Add lemon juice and mix.Drain the rice and add it in the pan with chicken.

8. Add 4 cups of water.Cover the pan and cook till rice is done.

9. Flip the rice gently.Garnish with fried onions and fresh coriander.

PAN ROAST CHICKEN WITH RICE

PAN ROAST CHICKEN WITH RICE
INGREDIENTS
1/2 kg chicken
1/2 kg basmati rice soaked for 15 minutes
2 onions sliced
2 tomatoes diced
2 pods of garlic
2 inch ginger pieces
3 green chillies
handful of coriander and mint leaves (dhania pudina)
1/2 cup yoghurt or dahi
1 tsp red chilli powder
1 tsp dhania powder (coriander)
1 tsp jeera powder(cumin)
1/2 tsp garam masala powder
1/4 tsp haldi (turmeric)
salt to taste

GARAM MASALA
1 star anise (badam phool)3 cloves(long)1 inch cinnamon (dalchini)6 peppercorns (kalimiri) 3 cardomons (elaichi)
1 tsp cumin seeds (jeera)1 bay leaf (tej patta)1/2 tsp fennel seeds (saunf)

METHOD
Grind ginger garlic greenchillies into fine paste

Marinate chicken with dahi half of the above ginger garlic chilli paste red chilli dhania jeera haldi garam masala powders and salt for 2 hours

Heat butter in a pan and roast the marinated chicken over high heat till all water from chicken is evaporated and chicken is roasted properly from all sides (do that on high heat we dont have to cook chicken completely it will cook with rice later)

Heat oil in a vessel golden brown all whole garam masala and sliced onions together then add remaining ginger garlic chilli paste salt tomatoes roasted chicken chopped dhania pudina together

Sautey 2 to 3 minutes over high heat then add washed and soaked basmati rice and double hot water to rice (If rice is 2 cups add 4 cups hot water)

Bring to a boil cover and simmer for 15 to 20 minutes

Lets it stand for 10 minutes and then serve the pilau. Enjoy
